Pie Crust

2 1/4 to 2/1/2 cups flour

1 t. salt

3/4 cup vegetable shortening, chilled

1/4 cup COLD water

Put 2 1/4 cups of the flour and the salt into the food processor.   Sift by running the blade through it.  Put the shortening in in three parts.   Run the blade again, and add cold water while it is running. Stop it when the dough forms a ball in the food processor.  If the dough feels sticky, add more flour and run the blade a few more seconds.

Divide the dough ball into 2 parts.  Roll each part into a ball, using your hands.  Roll each dough ball out between 2 sheets of waxed paper sprinkeled with flour.  Use for two single-crust pie shell or one double crust pie shell.

Put into pie pans by peeling back the top sheet of waxed paper & putting pie dough circle upside down into the pie pan.  Then peel away other sheet of waxed paper & form the crust with your fingers.
